[*]Start by peeling, coring, and cutting up the apples into 1 inch pieces
[*]Place them into a big bowl and sprinkle the cinnamon over top
[*]Mix the apples and cinnamon until all the apples have a light coating
[*]Preheat your oven to 350 F (175 C)
[*]In another bowl beat the eggs
[*]Add in the sugar and mix until all the sugar is dissolved
[*]Mix in the vanilla
[*]Add in a pinch of salt
[*]Sift in the flour and stir until everything is combined (It should look like pancake mix!)
Note: If you're using rice flour, combine your flour and xantham gum together before adding it to the wet ingredients.

[*]Scoop a little bit of the cake mix into the dish
[*]Add all the apples
[*]Pour the rest of the cake mix over the apples
[*]Let the mix settle in between all the apple pieces
[*]Cook for 30-40 minutes
[*]You can check if your cake is done by inserting a toothpick into the cake, if it comes out clean, your cake is done!
[*]If you used a Bundt pan, use a spatula to pull the cake away from the sides of the pan
[*]Let cool for about 10 minutes before removing from the pan (ask an adult for help with this)
