This is a type of spicy Arabic meatball that you can make in the oven. It is a great alternative to meatloaf and it is very easy to prepare. The key to making this dish is in the secret ingredient which many people do not know about.


Ingredients:

1 pound of ground beef, ground lamb or ground beef and lamb mixed together
5 medium sized potatos skinned and sliced into circles or cut into french-fry shapes
2-3 medium-sized tomatos cut into thin slices
Secret ingredient: 1 small potato shredded finely through a cheese grater or similar device
1 onion, finely chopped
4 cloves garlic, finely chopped
A handful of parsley, stems removed and finely minced
Salt, black pepper and other spices (according to your taste)
4-5 tablespoons olive oil


Preparation:

In an oven-safe baking dish, combine the following ingredients and mix well: ground meat, shredded potato, onion, garlic, parsley, olive oil, salt, pepper and spices. (Use spices such as all-spice or curry powder but do not use too much.)
Now make meat-balls from this mixture: each one should be a little smaller than a golf ball. For a more traditional shape, make each ball into an oblong shape rather than a ball. Place them side by side in the baking dish along with your sliced potatos. Be sure not to slice the potatos too thickly.
Sprinkle the meat and potatos with salt and pepper.
Cover everything with thin slices of tomatos and sprinkle these with salt and pepper also.
Place the dish into an oven which has been preheated to 500°F, shut the door and immediately reduce the heat to 350°F.
Cook for about one hour, turning the meat and potatos around after about 45 minutes. Cooking times vary so keep an eye out to make sure the meat does not get dried out. This dish tastes better when it is moist and some people prefer to cover the baking dish with aluminum foil in order to keep the juices in the pan while cooking. It is up to you.
A variation on this dish is to omit the tomatos and bake the kufta in Tahina, a sesame sauce. Enjoy!

500F = 260 Celcius
350F = 175 Celcius
